Try getting a well done steak in a medium to upmarket restaurant these days, it’s impossible. If you ask for well done, you will end up getting what in old money would have been called medium. I don’t mind medium steaks, but sometimes I just want one on the edge of being charcoal. It’s just food snobbery to think that the customers are wrong in wanting something a certain way, just because it isn’t the current fashion.
I’m going to have to start asking for a new category, super well done or maybe burned.
Medium Is The New Well Done

I’ve never been a fan of the well done steak, it just seems ruined to me!
Maybe it’s the northener in you? One of the managers at my old saturday job was from oop north and he used to like his toast burnt!
Comment by Neil Dunn — March 18, 2007 @ 11:32 pmwell, and I don’t mean to be a weirdo, but I would like to think people in englandland would be ALL ABOUT having their cow insides done well. What with how mad they are.
Comment by beav — March 19, 2007 @ 11:11 pmNot that I eat meat anymore… but when I did I’d ask for it RARE. “Just get it warm - That will do”.
Thats how a MAN eats his meat.
Comment by Frank Jania — March 19, 2007 @ 11:42 pmVisit Australia. Here the opposite is true - what should be “medium” is actually black and crispy. Getting a steak with a hint of pink calls for ordering “medium rare” or on occasions “rare”. What scares me is when I’m next in the UK (or France even more so) and forget the difference only to be presented with a somewhat lukewarm and possibly breathing slice of cow.
Comment by Ed — March 20, 2007 @ 8:06 amNeil, yeah it is probably a northern thing.
Beav, I know, I don’t know what it is with livestock here. If it’s not mad cows its flu infected birds, though aren’t all cows slightly mad anyway?
Frank, I did once have a very rare steak, but it just tasted too much like cow somehow.
Ed, I’ve always thought I’d like Australia.
Comment by Darren — March 20, 2007 @ 9:10 amYou’d like the steak here in Saudi as well, i asked for mine medium rare the other night and the waiter seemed shocked; apparently all the Saudis like their’s extra well done
Comment by Rob — March 25, 2007 @ 11:23 amWell, that makes sense, they also like meat pie after all.
